Why Asparagus Is So Healthy

Due to its high water content, asparagus is one of the particularly low-calorie vegetables, with only 18 calories per 100 grams. Yet, it is full of valuable nutrients: magnesium, potassium, calcium, and vitamins B1, B2, and folic acid make it a true supplier of important ingredients.1

– 2 to 3 tbsp freshly grated Parmesan

Preparation:

Wash asparagus, cut off woody ends. Marinate with olive oil, salt, and pepper and place in the air fryer. Cook at 180°C for about 8 to 10 minutes. Sprinkle Parmesan over it shortly before the end and bake for another 2 minutes until golden brown.

Warm Asparagus-Potato Salad with Lemon-Yogurt Dressing

I love dishes that not only taste good but also fill you up without being heavy. This lukewarm salad is my personal spring favorite–it combines crunchy asparagus with spicy potatoes and a fresh, lemony yogurt dressing. Perfect as a light dinner or meal prep for the office.

Ingredients (for 2 servings):

– 4 pre-cooked potatoes
– 250 g green asparagus
– 1 garlic clove
– 1 organic lemon
– 1 tbsp olive oil
– Salt, chili flakes

For the Dressing:

– 3 tbsp yogurt
– 1 tsp lemon juice
– 1 small garlic clove (finely chopped)
– Pepper, fresh parsley

Preparation:

Lightly crush the pre-cooked potatoes, season with salt and chili flakes, and bake in the air fryer at 180°C for about 15 minutes. Cook asparagus together with garlic and lemon slices for about 10 minutes. Serve everything with the yogurt dressing and serve warm.

Sometimes it’s exactly the mix of crispy, light, and spicy–and this recipe hits the mark for me. The chickpeas become wonderfully crunchy in the air fryer, the asparagus stays nice and firm, and the fresh lemon dip brings the necessary freshness. Ideal for days when you want to eat healthily without spending hours in the kitchen.

Ingredients (for 2 servings):

– 200 g green asparagus
– 1 small can of chickpeas (rinsed, well-drained)
– 1 tsp olive oil
– ½ tsp paprika powder
– Salt, pepper, optional some cumin

For the Dip:

– 2 tbsp yogurt (plant-based possible)
– 1 tsp lemon juice
– Some lemon zest
– Pinch of salt

The asparagus is lightly roasted on the outside in the air fryer, remains tender inside–along with a soft-boiled egg and a velvety avocado cream. Ideal for those who want to eat consciously without sacrificing taste.

Ingredients (for 2 servings):

– 400 g green asparagus
– 1 tbsp olive oil
– Salt, pepper
– 2 eggs

For the Avocado Cream:

– 1 ripe avocado
– 1 tsp lemon juice
– 1 tbsp yogurt (optional for extra creaminess)
– Salt, pepper
– Optional: chili flakes

Preparation:

Wash asparagus, remove woody ends, and mix with olive oil, salt, and pepper. Cook in the air fryer at 180°C for about 8 to 10 minutes until lightly browned. Meanwhile, boil the eggs in boiling water for about 6 to 7 minutes until soft, then cool and peel. For the avocado cream, puree the flesh with lemon juice, yogurt, salt, and pepper until smooth or mash with a fork. Arrange asparagus on plates, serve with avocado cream, and place the halved eggs on top. Top with chili flakes as desired.
