In the refrigerated section, they often sit side by side: the same brand, the same design–one labeled “alcohol-free,” the other “0.0%.” At first glance, this seems like mere label cosmetics. However, the two beer variants differ significantly. FITBOOK explains what’s behind the labels–and why the difference is crucial for some people.
Why “alcohol-free” doesn’t automatically mean 0.0 percent
Those who choose an alcohol-free beer typically expect no alcohol. However, beers sold as “alcohol-free” can contain up to 0.5 percent alcohol by volume.
What surprises many: This limit isn’t legally defined. According to the Bavarian State Office for Health and Food Safety (LGL), there is no legally defined maximum for alcohol-free beer.1 Instead, a so-called market perception applies–an industry-wide standard that has become established in practice and is recognized by authorities.
Additionally, beverages must only indicate their alcohol content on the label if it exceeds 1.2 percent by volume. The Federal Ministry of Agriculture, Nutrition, and Home Affairs (BMLEH) also points this out, referencing current labeling regulations. This threshold is set in European food law and applies to beverages with more than 1.2 percent alcohol by volume. Therefore, a beer with 0.4 percent alcohol wouldn’t legally need to disclose its alcohol content.2
The fact that consumers usually find the residual alcohol on the label is due to a voluntary agreement. In 2014, the Federation of German Consumer Organizations and the German Brewers Association agreed to transparently label the alcohol content.3 The occasion was a consumer survey indicating that most people interpret the term “alcohol-free” literally. Therefore, many bottles today feature the note “Alc. < 0.5% vol.”
How to assess the alcohol content in alcohol-free beers
To put it in perspective, it’s worth looking beyond the beer aisle. According to LGL studies, numerous foods naturally contain small amounts of alcohol. These include sauerkraut, vinegar, fermented tea drinks, yeast-based baked goods, and fruit juices, where natural fermentation processes produce alcohol. Even ripe bananas or apple juice can contain small amounts of alcohol.
The alcohol levels are thus in a range found in many everyday foods–often without consumers consciously noticing. For most healthy adults, this low alcohol content is not practically significant. However, professional societies recommend complete abstinence from alcohol during pregnancy. Those who wish to avoid alcohol for medical reasons, during pregnancy, after alcohol dependency, or for religious reasons should look for the “0.0%” label.
Clear case for 0.0-percent beers
The “0.0% vol” label is much stricter. According to the LGL, a beer with this label may contain less than 0.05 percent alcohol by volume–less than one-tenth of the amount allowed in a beer labeled “alcohol-free.”
While “alcohol-free” is primarily a customary designation, “0.0%” serves as a clear signal to consumers that the alcohol has been practically completely removed. Therefore, many breweries today offer both alcohol-free and 0.0-percent beers–even though the products often appear almost identical at first glance.
Unlike the term “alcohol-free,” “0.0%” indicates that analytically, virtually no alcohol is detectable or only traces are present. The Consumer Center NRW therefore recommends that anyone who wants to completely avoid alcohol should specifically choose products labeled “0.0%.”4

How alcohol-free beer is brewed
Alcohol-free beer is produced in various ways. The method a brewery chooses can also affect the taste.
Fermentation is stopped early
In this process, fermentation is prematurely halted. The yeast only partially converts the malt sugar into alcohol, keeping the alcohol content low. Because more unfermented malt sugar remains in the beer, these beers often taste slightly sweeter and maltier. The German Brewers Association also points this out.5
Alcohol is removed afterward
Here, a regular beer is brewed and fully fermented first. Only afterward is the alcohol removed–usually through vacuum distillation or a membrane process.
In vacuum distillation, the boiling point of alcohol drops significantly under pressure. As a result, it evaporates at relatively low temperatures, preserving the beer’s aromas. Volatile aroma compounds can also be captured and re-added after the alcohol is removed. Because the beer can fully mature first, it often comes closer in taste to the alcoholic original.
Additionally, the Bavarian State Office for Health and Food Safety (LGL) mentions special yeast strains that hardly or do not ferment certain types of sugar, thus producing less alcohol from the start.

Why 0.0 percent can be more complex
Not every 0.0-percent beer is made using the same method. Depending on the brewery, both early-stopped fermentation and subsequent alcohol removal or a combination of different methods are used.
To achieve such low levels, breweries often rely on subsequent alcohol removal or combine various methods. The Lower Saxony State Office for Consumer Protection and Food Safety (LAVES) also points this out.6
The “0.0%” label is therefore more than a marketing term. It represents a particularly low residual alcohol content, whose production often involves additional technical effort. It is intended to signal to consumers that the product is also suitable for people who wish to avoid alcohol as completely as possible.
