Quick Energy–Gluten-Free, Rich in Vitamins B, C, and Potassium
They look like sugary sins, but inside are only healthy—and vegan—ingredients. While not exactly low-calorie due to their high carbohydrate content, dates provide plenty of vitamins B and C, abundant potassium (important for heart health!), and a host of other minerals and trace elements; at the same time, the dried fruits aid digestion. Almonds also bring a good amount of unsaturated fatty acids to the table, along with vitamin E, a valuable antioxidant that our body needs to fend off free radicals. Dates, like almonds, are known to be quick energy providers even in their unprocessed form. And have we mentioned how incredibly delicious they are…?

For About 20 Almond-Date Energy Balls, You’ll Need
- 150 g ground almonds
- 4 tbsp coconut flakes (+ 5 tbsp for coating)
- 1 tbsp chia seeds
- 1 tbsp cocoa powder
- 2 tbsp almond butter
- 12 dried dates, pitted
- 5 tbsp unhulled sesame seeds

Instructions
Place the finely ground almonds in a food processor. Add 4 tbsp of coconut flakes and the chia seeds and chop everything for about 30 seconds. Then add cocoa powder and almond butter and pulse briefly again. Now, first add half of the dates and mix for a moment, then add the rest. Let the machine run until everything is combined and no date pieces remain.
Tip: The mixture has the perfect consistency when it can be easily shaped. If it’s too crumbly, add a bit more almond butter.
Now, form small balls with your hands. If the date-almond mixture sticks to your skin, it helps to moisten your palms with a little water. Place the prepared coconut flakes in a bowl and roll the balls in them so they are evenly coated. Roll the other half in sesame seeds in the same way.
