Pancakes don’t have to be fried in tons of butter and served with fatty bacon. How about valuable nutrients instead, like vitamin C and antioxidants, plus iron, potassium, zinc, and plenty of fiber? Enhanced with a banana (which also contributes to the nutrient richness with its high potassium and magnesium content!) and a handful of blueberries, these pancakes make for an extra-delicious healthy breakfast.

For 4 pancakes you need
• 2 smoothie balls (we used the “Kids Blendie” variety from our Fitfood Award winner Hummingbird–alternatively, fruit bars or some dried fruit will work)
• 1 ripe banana
• 40g Greek yogurt
• 140ml milk (we used oat milk!)
• 70g almond flour
• 1 handful of blueberries
• 1 tbsp coconut oil
• (if desired) maple syrup
Instructions
Place the banana and roughly chopped smoothie balls in a large bowl. Pour in the milk and blend well with an immersion blender. Then sift in the almond flour, add the Greek yogurt, and finally, add half of the prepared blueberries. Mix well.

Heat the coconut oil in a pan, add the batter by the ladleful, and fry on both sides until golden brown over low heat. Serve with the remaining blueberries and, if desired, sweeten with a bit of maple syrup. Done! And so outrageously delicious…
