Vegan Lemon Protein Balls – Ingredients
A key component of the lemon protein balls is vegan vanilla protein powder. Instead of heavy cream, which might be expected in other treats, we use coconut milk combined with the full lime power from zest and juice. It tastes like a beach vacation–and makes you forget about gloomy fall and winter weather.
For about 12 pieces, you will need:
- 60 g vegan vanilla protein powder (Find a product comparison of vegan protein powders here)
- 100 g chopped almonds
- 5 tablespoons coconut milk
- 5 tablespoons lime juice
- Zest from 1 untreated lemon and lime each
- A handful of chopped almonds

Combine the protein powder with the chopped almonds, lemon zest, coconut milk, and lime juice in a bowl and knead by hand into a smooth dough. Form 12 balls and roll them in the chopped almonds and lime zest. Done!
