Normally, you wouldn’t necessarily call minced meat rolls a “light meal.” But with our FITfuttern recipe, even those conscious of their figure can enjoy the Southeast European classic without any guilt: Cevapcici.

For dishes with ground meat, fatty (and therefore cheaper) meat is usually used. Consequently, many think that burger patties, meat skewers, and the like must automatically be calorie bombs. But that’s only the case if you have no control over the ingredients used!

Recipe for 2 Servings

• 1 tbsp olive oil
• 1 clove of garlic
• 1 onion
• 300g minced beef
• 7 wooden skewers
• 1/2 tsp cayenne pepper
• 1 tsp sweet paprika powder
• Salt, pepper
• Olive oil for frying

Rice salad:
• 80g cooked brown rice
• 1 yellow, 1 red bell pepper
• 3 spring onions
• 100g feta cheese
• 1 handful of cherry tomatoes

Dressing:
• 1 tbsp olive oil
• Parsley as needed
• 1 tsp sweet paprika powder
• 1 tsp brown sugar
• 1 tsp mustard
• Juice of 1 lemon

Instructions

Soak the wooden skewers in cold water. Finely chop the onions and garlic. Heat 1 tbsp olive oil in a pan and sauté both, then let cool slightly. Knead the meat with the spices and add the onion mixture. Mix everything well and form seven evenly sized rolls around the skewers.

Cook the rice according to package instructions. Dice the bell peppers and feta, slice the spring onions into rings, and halve the cherry tomatoes.

For the dressing, mix 1 tbsp olive oil with the lemon juice. Add the dry spices and finely chopped herbs and combine with the rice-vegetable-feta mixture. Let it sit briefly.

Sear the skewers in a pan with 1 tbsp olive oil. Serve everything together–and enjoy.
