Until now, we’ve mostly encountered it as an appetizer or main course, but it’s truly unbeatable in cake form. Avocado cheesecake–that should also please vegans.
What Makes Avocado Cheesecake a Mineral Powerhouse
Our avocado cheesecake is entirely free of animal products. Besides its namesake main ingredient, pecans are also used, specifically in the cake base. Thanks to their calcium, magnesium, and iron content, they are true mineral powerhouses. We use agave syrup for subtle sweetness and finish it off with a fresh citrus note. The best part, besides its taste: You don’t need an oven for this cake.

For an Avocado Cheesecake (approx. 18 cm Ø) You Need
Base:
- 150 grams pitted dates
- 100 grams pecans
- 25 grams shredded coconut
- 30 grams cocoa powder
- 35 grams virgin coconut oil
Topping:
- 550 grams avocado flesh (about 6 pieces)
- 125 milliliters lemon juice
- 90 grams coconut oil
- 125 milliliters agave syrup
Avocado Cheesecake: Here’s How
Place the ingredients for the cake base together in a food processor. Use the resulting mixture to line the bottom of the cake pan and press it down firmly.

Peel the avocados, remove the pits, and scoop the flesh into a large bowl with a spoon. Now add lemon juice, coconut oil, and agave syrup, and puree everything well–preferably for several minutes. The smoother, the creamier and nicer the final product will be!
Spread the avocado mousse over the cake base, smoothing the surface with a knife. Now place the entire cake in the refrigerator for at least four hours–preferably overnight. This way, the cake won’t collapse, and you can slice it perfectly.
